I tried these unassumingly simple to bake and delicious to eat maize biscuits at a friends. I immediately took down her recipe and put maize flour on my grocery list. When my significant half, walked in with double the quantity of maize flour, that was actually mentioned in the list; I knew I had to stop procrastinating and get to baking those delightful biscuits soon. Here goes the recipe…(I have some alterations to it based on my baking experience)

Maize flour – 90 grams

All purpose Flour – 90 grams

Butter – 80 grams

Salt – a pinch

Egg yolk – one

Vanilla essence – 1 teaspoon

Sugar – 70 grams (original recipe says 50 grams. Since I used salted butter, i increased the quantity of the sugar)

Water – 1 teaspoon

  1. Chop the cold butter into chunks and add to it rest of the ingredients.
  2. Mix all the ingredients well, gently breaking the butter with hands and incorporating it into the mixture.
  3. Add water, only if you feel the mixture is not coming together. I mainly used water while I made balls out the mixture to plaster the cracks if any.
  4. Place the balls on a cookie tray, lined with parchment paper.
  5. Bake in a preheated over at 180 degree C for 15 minutes (original recipes says 160 degree C for 10 minutes). All depends on individual oven.

Chocolate Cookies

Guests coming? No time to pick up something from the market…fret not! Bake these simple cookies at home and surprise your guests! And yes keep them away from kids…they simply get addicted to it! 🙂

This will roughly give you 6-9 large cookies. If you want more adjust the quantity of ingredients!

 

Butter – 100 gms

Refined flour (Maida) – 1 cup

White sugar  – 1/2 cup

Brown Sugar – 1/2 cup

Egg – 1 no

Vanilla Essence – 1 tsp

Baking soda – 1/2 tsp

Salt – 2 pinches

Chocolate Bar / chips – 1 big bar / 1 cup of chips  (if using bar roughly chop it)

 

  1. Place a baking sheet over cookie rack
  2. Preheat the oven at 180 degree C along with the rack with baking sheet
  3. Whip butter nicely
  4. Add both types of sugar to the butter and blend it nicely till creamy
  5. Add egg and beat
  6. Add vanilla essence and beat
  7. Add baking soda, salt and finally flour little by little & keep blending
  8. Add chocolate pieces and gently fold with a spatula
  9. If the dough is soft, refrigerate for about 1/2 hour until firm
  10. Drop the batter on the baking sheet with a spoon
  11. Keep enough distance between two cookies. It expands while cooking. So if there isn’t enough space you might end up getting chocolate cookie bar 🙂
  12. Bake for about 12-15 minutes or until golden brown
  13. Cook on a wire rack & serve

Almond Macaroons

As single even if you have a functional house;  one thing that is a must for you is a microwave and if it is with convection mode, even better! Check out these quick and tasty macaroons

Cardamom seeds (powdered) – 1/2 tsp

Almond Powder – 200gms

Castor Sugar – 200 gms

Egg whites – 2 nos

Rose Water

  1. Beat Egg whites until stiff
  2. Add rest of the ingredients slowly and keep beating till you get to a sticky mixture ball
  3. Dab your hands with few drops of rose water and make small balls
  4. Flatten them slightly with your palm and place it on a baking tray
  5. Gently press in an almond in each of the macaroon
  6. Bake in a preheated oven at 200 degree C for 10-15 minutes
  7. Cool it before storing or serving

Chocolate Chips Cookies

Something that really excites all, kids or adult is a warm freshly baked chocolate chip cookie. The buttery crumbly texture as you bite into thick chunks of chocolate, the feeling is absolutely divine! 🙂 Check it out!

Butter – 120 gms

Sugar Powder – 135 gms

Egg – 1 no. (beaten)

All purpuse flour (Maida) – 180 gms

Baking soda – 1/2 tsp

Chocolate chips – 150 gms (dark / white depending on your choice)

Vanilla essence – 1 tsp

  • Beat butter until smooth. Now add sugar powder gradually and keep beating.
  • Add the beaten egg with vanilla essence.
  • Sieve the flour and baking soda once
  • Add sieved flour to the butter mixture gradually and mix
  • Add chocolate chips
  • The dough that you get should be of slightly thick consistency.
  • Form balls and flatten slightly
  • Put them on a greased tray leaving gaps between each dough mix
  • Bake in a pre heated oven at 180 degree C for 15 minutes
  • Cool and serve
