I always think of my room mate Shilpi whenever I make poha, for it used to be our staple sunday breakfast once upon a time :-). Poha is simple to make and so tasty! Do try…
Poha (Flat rice) – 5 cups
Turmeric – ½ tsp
Mustard seeds – 2 tsp
Urad daal (white lentils) – 1 tsp
Dried red chilli – 2
Boiled potato – ½ cup (diced)
Peas – ½ cup
Onions – 1 cup (finely chopped)
Green chilli – 2 (finely chopped)
Curry leaves – 1 sprig
Coriander leaves – for garnish (finely chopped)
Lemon juice – 2 tsp
Fried peanuts – ¼ cup (optional)
Salt to taste
Oil – 2 tbsp
1. Sprinkle water mixed with salt and turmeric over the flat rice to sufficiently moist it.
2. Add oil to skillet and let it warm
3. Add mustard seeds and leave it to splutter. Now add white lentils and red chilli
4. Add all vegetables and sauté on medium flame
5. Add green chilli and curry leaves and sauté well
6. Add fried peanuts, sugar and coriander leaves and mix
7. Add moist flat rice and stir well
8. Take the skillet off the flame and add lemon juice. Mix well
9. Serve hot
